  • 1 ½ cups premium white chocolate chips
  • ¼ cup unsalted butter
  • 2 tablespoons fresh lemon juice

  • 1 ½ cups powdered sugar (confectioners' sugar)
  • ½ teaspoon lemon extract (optional for extra kick)
  • Pinch of salt

Instructions

  1. Measure the Rice Chex cereal into a very large mixing bowl to ensure enough room for tossing without crushing the pieces.
  2. In a microwave-safe bowl, combine the white chocolate chips and unsalted butter. Microwave in 30-second intervals, stirring well between each burst, until completely melted and smooth. Be careful not to overheat as white chocolate can seize.
  3. Stir the fresh lemon juice, lemon zest, lemon extract, and a pinch of salt into the melted chocolate mixture until fully incorporated and glossy.
  4. Pour the lemon-chocolate mixture evenly over the cereal. Use a rubber spatula to gently fold the mixture until every piece of cereal is thoroughly coated. Work quickly but gently to avoid breaking the cereal.
  5. Transfer the coated cereal into a large zip-top bag (or two gallon-sized bags). Add the powdered sugar, seal the bag tightly, and shake vigorously until the cereal is evenly coated in a snowy white layer.

Notes

Store in an airtight container at room temperature for up to one week, or in the refrigerator for up to two weeks for a chilled treat. If using colored candy melts for a festive look, add them after the white chocolate step.
