- 9 cups Rice Chex cereal
- 1 ½ cups premium white chocolate chips
- ¼ cup unsalted butter
- 2 tablespoons fresh lemon juice
- 1 tablespoon fresh lemon zest (about 1 medium lemon)
- 1 ½ cups powdered sugar (confectioners' sugar)
- ½ teaspoon lemon extract (optional for extra kick)
- Pinch of salt
Instructions
- Measure the Rice Chex cereal into a very large mixing bowl to ensure enough room for tossing without crushing the pieces.
- In a microwave-safe bowl, combine the white chocolate chips and unsalted butter. Microwave in 30-second intervals, stirring well between each burst, until completely melted and smooth. Be careful not to overheat as white chocolate can seize.
- Stir the fresh lemon juice, lemon zest, lemon extract, and a pinch of salt into the melted chocolate mixture until fully incorporated and glossy.
- Pour the lemon-chocolate mixture evenly over the cereal. Use a rubber spatula to gently fold the mixture until every piece of cereal is thoroughly coated. Work quickly but gently to avoid breaking the cereal.
- Transfer the coated cereal into a large zip-top bag (or two gallon-sized bags). Add the powdered sugar, seal the bag tightly, and shake vigorously until the cereal is evenly coated in a snowy white layer.
- Spread the puppy chow out onto a baking sheet lined with parchment paper and let it sit at room temperature for about 15-20 minutes to set before serving.
Notes
Store in an airtight container at room temperature for up to one week, or in the refrigerator for up to two weeks for a chilled treat. If using colored candy melts for a festive look, add them after the white chocolate step.
