  • 10 ounces (about 40 large) agar agar-free marshmallows
  • 1 tablespoon fresh lemon juice
  • 2 teaspoons lemon zest (from 1-2 medium lemons)
  • 1/2 teaspoon vanilla extract (optional, but recommended)
  • 6 cups puffed rice cereal (like Rice Krispies)
  • Pinch of salt

Instructions

  1. Prepare a 9×13 inch baking pan by lining it with parchment paper or greasing it lightly with butter or cooking spray. This will make removal much easier. Set aside.
  2. In a large non-stick pot or Dutch oven, melt the unsalted butter over medium-low heat. Once melted, add the agar agar-free marshmallows and a pinch of salt. Stir constantly until the marshmallows are completely melted and smooth. Be careful not to let them brown.
  3. Remove the pot from the heat. Stir in the fresh lemon juice, lemon zest, and vanilla extract (if using) until well combined. The mixture will be fragrant and slightly thinner.
  4. Add the puffed rice cereal to the marshmallow mixture. Using a rubber spatula, gently fold the cereal into the marshmallow mixture until it is evenly coated. Work quickly but carefully to ensure all cereal is covered before it cools too much.
  5. Transfer the coated cereal mixture into the prepared 9×13 inch pan. Using a buttered spatula or your lightly buttered hands, gently and evenly press the mixture into the pan. Do not press too firmly, as this can make the treats hard and dense.
  6. Let the Zesty Lemon Rice Krispy Treats cool completely at room temperature for at least 1 hour, or in the refrigerator for 30 minutes, until set. Once firm, lift the treats out of the pan using the parchment paper, place on a cutting board, and cut into 12 squares using a sharp, lightly buttered knife.

Notes

For extra lemon flavor and visual appeal, sprinkle a little extra lemon zest over the top before they set. Store leftover treats in an airtight container at room temperature for up to 3 days to maintain their chewiness. Avoid refrigerating for too long, as it can make them hard. These treats are best enjoyed fresh! For easy cutting, you can lightly butter your knife.
