Ingredients
- 8 slices thinly sliced beef salami (large, round)
- 4 ounces cream cheese, softened
- 2 tablespoons finely chopped dill pickles (or gherkins)
- 1 tablespoon fresh chives, minced
- 1 teaspoon Dijon mustard
- 1/4 teaspoon garlic powder
- Pinch of black pepper
- Optional: fresh dill sprigs for garnish
Instructions
- In a small bowl, combine the softened cream cheese, chopped dill pickles, minced chives, Dijon mustard, garlic powder, and black pepper. Mix well until smooth and thoroughly combined.
- Lay each slice of beef salami flat on a clean surface or a piece of parchment paper.
- Evenly spread a thin layer of the cream cheese mixture over each beef salami slice, leaving a small border around the edges.
- Carefully roll each beef salami slice tightly from one end to the other, creating a log.
- If desired, wrap the rolled beef salami logs in plastic wrap and chill in the refrigerator for at least 15 minutes to firm up, making them easier to slice. This step is optional but recommended for cleaner cuts.
- Once chilled (or immediately, if not chilling), use a sharp knife to slice each beef salami log into 3-4 pinwheels.
- Arrange the Zesty Keto Beef salami Pinwheels on a platter. Garnish with fresh dill sprigs, if using, and serve immediately.
Notes
For extra zest, add a tiny squeeze of lemon juice to the cream cheese mixture. You can also vary the fillings with finely chopped olives, bell peppers, or a sprinkle of everything bagel seasoning. These roll-ups are best enjoyed fresh but can be stored in an airtight container in the refrigerator for up to 2-3 days.
