Ingredients
- 4 boneless, skinless chicken breasts
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- 1 tablespoon fresh oregano, chopped
- 1 tablespoon lemon juice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- In a bowl, whisk together olive oil, minced garlic, rosemary, thyme, oregano, lemon juice, salt, and pepper.
- Place chicken breasts in a resealable bag or shallow dish. Pour marinade over chicken, ensuring each piece is well coated. Marinate in the refrigerator for at least 30 minutes, or up to 4 hours.
- Preheat grill to medium-high heat. Remove chicken from marinade and discard marinade.
- Grill chicken for 6-8 minutes per side, or until internal temperature reaches 165°F (74°C).
- Let chicken rest for 5 minutes before serving.
Notes
For best results, marinate chicken for at least 2 hours. Serve with grilled vegetables, pasta, or a fresh salad. Store leftover chicken in an airtight container in the refrigerator for up to 3 days. You can also use this marinade for bone-in chicken thighs or drumsticks.
