Ingredients
- 2 medium sweet potatoes, peeled and sliced into 1/4-inch thick rounds
- 2 tablespoons olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 4 ounces feta cheese, crumbled
- 2 tablespoons honey
- 1 tablespoon fresh thyme leaves, for garnish (optional)
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, toss the sweet potato rounds with olive oil, salt, and pepper until evenly coated.
- Arrange the sweet potato rounds in a single layer on the prepared baking sheet. Roast for 20-25 minutes, or until tender and slightly caramelized, flipping halfway through.
- Remove from oven and let cool slightly. Top each sweet potato round with crumbled feta cheese and drizzle with honey.
- Garnish with fresh thyme leaves, if desired. Serve immediately.
Notes
For a spicier kick, add a pinch of red pepper flakes before roasting. You can also use goat cheese or ricotta salata instead of feta. These are best served immediately but can be stored in the refrigerator for up to 2 days.
