  • 1.5 pounds Yukon Gold potatoes, peeled and diced into 1/2-inch cubes
  • 1/2 teaspoon dried thyme
  • 1 bay leaf
  • 1/2 cup heavy cream (or milk for a lighter option)
  • 2 tablespoons all-purpose flour
  • 1/4 cup cold water
  • Salt and freshly ground black pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Heat the olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Add the sliced smoked beef sausage and cook until lightly browned, about 5-7 minutes. Remove the sausage with a slotted spoon and set aside, leaving the drippings in the pot.
  2. Add the chopped onion, carrots, and celery to the pot. Sauté for 5-7 minutes, until the vegetables begin to soften. Stir in the minced garlic and cook for another minute until fragrant.
  3. Pour in the chicken broth, then add the diced potatoes, dried thyme, and bay leaf. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the potatoes are fork-tender.
  4. While the soup simmers, whisk together the all-purpose flour and cold water in a small bowl until smooth to create a slurry.
  5. Once the potatoes are tender, stir the reserved smoked beef sausage back into the pot. Gradually whisk in the flour slurry until the soup begins to thicken slightly. Simmer for another 2-3 minutes, stirring occasionally.
  6. Remove the pot from the heat and stir in the heavy cream. Discard the bay leaf. Season the soup with salt and freshly ground black pepper to taste. Ladle into bowls and garnish with fresh chopped parsley before serving.
