Ingredients
- 2 large sweet potatoes, scrubbed and unpeeled
- 2 tablespoons olive oil
- 1/2 teaspoon sea salt
- 1/4 teaspoon black pepper
- 1/4 cup crumbled feta cheese
- 2 tablespoons honey
- 1 tablespoon fresh parsley or thyme, chopped (for garnish, optional)
Instructions
- Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
- Slice the sweet potatoes into 1/4-inch thick rounds. Aim for consistent thickness to ensure even cooking.
- In a large bowl, toss the sweet potato rounds with olive oil, sea salt, and black pepper until evenly coated.
- Arrange the seasoned sweet potato rounds in a single layer on the prepared baking sheet, ensuring they do not overlap. This helps them roast and crisp instead of steam.
- Roast for 15-20 minutes, or until the sweet potatoes are tender and the edges are slightly caramelized and golden brown. Flip them halfway through for even browning.
- Remove the baking sheet from the oven. Immediately sprinkle the crumbled feta cheese over the hot sweet potato rounds. The residual heat will slightly soften the feta.
- Drizzle the honey evenly over the sweet potatoes and feta. If using, sprinkle with fresh chopped parsley or thyme.
- Serve immediately and enjoy the delightful combination of sweet, salty, and savory flavors!
Notes
For an extra touch of flavor, try adding a pinch of chili flakes with the salt and pepper for a subtle kick. These rounds are best served warm but can be enjoyed at room temperature. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated gently in the oven or air fryer for best texture.
