Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup grated Parmesan cheese
- 1/2 cup breadcrumbs
- 1 teaspoon garlic powder
- 1/2 teaspoon dried oregano
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 large eggs, beaten
- 2 tablespoons olive oil
- 4 tablespoons butter
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1/4 cup chicken broth
- 1/4 cup grated Parmesan cheese (for sauce)
- 2 tablespoons chopped fresh parsley, for garnish
Instructions
- Preheat oven to 400°F (200°C). Lightly grease a baking dish.
- In a shallow dish, combine 1 cup Parmesan cheese, breadcrumbs, garlic powder, oregano, salt, and pepper.
- Dip each chicken breast in the beaten eggs, then dredge in the Parmesan mixture, pressing to coat evenly.
- Place the coated chicken breasts in the prepared baking dish. Drizzle with olive oil.
- Bake for 20-25 minutes, or until the chicken is cooked through and the crust is golden brown.
- While the chicken is baking, prepare the creamy garlic sauce. Melt butter in a saucepan over medium heat. Add minced garlic and cook for 1 minute, until fragrant.
- Pour in heavy cream and chicken broth. Bring to a simmer, then reduce heat and simmer for 5 minutes, or until the sauce has thickened slightly.
- Stir in 1/4 cup Parmesan cheese. Season with salt and pepper to taste.
- Spoon the creamy garlic sauce over the baked Parmesan crusted chicken. Garnish with fresh parsley and serve immediately.
Notes
For extra crispy chicken, broil for the last 2-3 minutes of baking. Store leftovers in an airtight container in the refrigerator for up to 3 days. Serve with pasta, rice, or roasted vegetables. You can substitute the heavy cream with half-and-half for a lighter sauce, but the sauce may not be as thick.
