  • 4 boneless, skinless chicken breasts
  • 1 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs, beaten
  • 2 tablespoons olive oil
  • 4 tablespoons butter
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/4 cup chicken broth
  • 1/4 cup grated Parmesan cheese (for sauce)
  • 2 tablespoons chopped fresh parsley, for garnish

Instructions

  1. Preheat oven to 400°F (200°C). Lightly grease a baking dish.
  2. In a shallow dish, combine 1 cup Parmesan cheese, breadcrumbs, garlic powder, oregano, salt, and pepper.
  3. Dip each chicken breast in the beaten eggs, then dredge in the Parmesan mixture, pressing to coat evenly.
  4. Place the coated chicken breasts in the prepared baking dish. Drizzle with olive oil.
  5. Bake for 20-25 minutes, or until the chicken is cooked through and the crust is golden brown.
  6. While the chicken is baking, prepare the creamy garlic sauce. Melt butter in a saucepan over medium heat. Add minced garlic and cook for 1 minute, until fragrant.
  7. Pour in heavy cream and chicken broth. Bring to a simmer, then reduce heat and simmer for 5 minutes, or until the sauce has thickened slightly.
  8. Stir in 1/4 cup Parmesan cheese. Season with salt and pepper to taste.
  9. Spoon the creamy garlic sauce over the baked Parmesan crusted chicken. Garnish with fresh parsley and serve immediately.

Notes

For extra crispy chicken, broil for the last 2-3 minutes of baking. Store leftovers in an airtight container in the refrigerator for up to 3 days. Serve with pasta, rice, or roasted vegetables. You can substitute the heavy cream with half-and-half for a lighter sauce, but the sauce may not be as thick.
