Ingredients
- 8 sheets phyllo dough, thawed
- 4 ounces feta cheese, crumbled
- 2 tablespoons olive oil, plus more for brushing
- 1 tablespoon chopped fresh dill
- 1 tablespoon chopped fresh mint
- 1/4 teaspoon black pepper
- 2 tablespoons butter, melted
- 2 tablespoons honey
- 1 teaspoon chili flakes
- 1/4 teaspoon smoked paprika
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a bowl, combine crumbled feta cheese, 2 tablespoons olive oil, dill, mint, and pepper. Mix well.
- In a small bowl, whisk together honey, chili flakes, and smoked paprika to create the chili honey.
- Lay one sheet of phyllo dough on a clean surface. Brush with melted butter. Top with another sheet of phyllo dough and brush again with melted butter. Repeat until you have four layers.
- Cut the layered phyllo dough into four equal strips. Place a spoonful of the feta mixture at the bottom of each strip.
- Fold the bottom corner of the phyllo dough over the filling to create a triangle. Continue folding the triangle up the strip until you reach the end.
- Place the feta rolls on the prepared baking sheet. Brush the tops with melted butter.
- Bake for 18-20 minutes, or until golden brown and crispy. Let cool slightly before serving.
- Drizzle the baked feta rolls generously with the prepared chili honey and serve immediately.
Notes
For a spicier kick, add more chili flakes to the honey. The feta rolls are best served immediately while they are still warm and crispy. You can prepare the feta mixture and chili honey ahead of time and store them separately in the refrigerator. Assemble and bake the rolls just before serving. Store leftover feta rolls in an airtight container in the refrigerator for up to 2 days. Reheat in the oven for best results.
