Ingredients

  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg, room temperature
  • 1/2 cup fresh orange juice, divided
  • 2 tablespoons fresh orange zest
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups powdered sugar (confectioners' sugar)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two large baking sheets with parchment paper.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar using a hand mixer or stand mixer until light and fluffy, about 2-3 minutes.
  3. Add the egg, 1/4 cup of the fresh orange juice, and the orange zest to the butter mixture. Beat until well combined. The mixture may look slightly curdled, which is normal.
  4. In a separate medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until a soft, sticky dough forms. Do not overmix.
  6. Drop rounded tablespoon-sized portions of dough onto the prepared baking sheets, spacing them about 2 inches apart as they will spread slightly.
  7. Bake in the preheated oven for 10-12 minutes, or until the bottoms are lightly golden and the tops are set but still soft. Avoid browning the tops.
  8. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  9. While cookies cool, prepare the glaze by whisking the powdered sugar with the remaining 1/4 cup orange juice in a small bowl until smooth and pourable.
  10. Dip the tops of the cooled cookies into the glaze or drizzle it over them with a spoon. Let the glaze set for 15 minutes before serving.

Notes

For the best flavor, use freshly squeezed orange juice rather than bottled. Store these cookies in an airtight container at room temperature for up to 3 days; placing a slice of bread in the container helps keep them soft.
