Ingredients
- 1.5 cups Unsweetened Almond Milk (or milk of choice)
- 1 scoop (approx. 30g) High-Quality Whey Protein Powder (Chocolate, Vanilla, or Peanut Butter flavor recommended)
- 1 tablespoon Unsweetened Cocoa Powder (for chocolate base, optional)
- 1 tablespoon Powdered Peanut Butter (for peanut butter base, optional)
- 1-2 tablespoons Sugar-Free Sweetener (like erythritol, stevia, or monk fruit, to taste)
- 1/4 teaspoon Xanthan Gum (optional, for enhanced creaminess)
- 1/2 teaspoon Vanilla Extract (optional, enhances flavor)
Instructions
- Combine all liquid ingredients (milk, vanilla extract if using) into a Ninja Creami pint.
- Add the dry ingredients: protein powder, cocoa powder (if using), powdered peanut butter (if using), sugar-free sweetener, and xanthan gum (if using).
- Whisk thoroughly directly in the pint until all ingredients are well combined and no lumps remain. Ensure the mixture is smooth and uniform.
- Place the lid on the Ninja Creami pint and freeze horizontally for at least 24 hours, or until completely solid. This step is crucial for the perfect texture.
- Once frozen solid, remove the pint from the freezer and place it into the Ninja Creami outer bowl with the lid on.
- Select the 'Lite Ice Cream' or 'Ice Cream' function. Let the machine process the mixture. It will take approximately 2-3 minutes.
- After the first spin, the mixture may appear crumbly or powdery. Create a hole in the center of the mixture, add 1-2 tablespoons of milk, and select the 'Re-spin' function. Process again for another 2-3 minutes until a creamy, smooth consistency is achieved.
- If adding mix-ins (like chocolate chips, chopped nuts, or fruit), create a well in the center of the processed ice cream. Add your desired mix-ins and select the 'Mix-in' function. Serve immediately and enjoy your high-protein, creamy delight!
Notes
Freezing time is key: The pint must be frozen completely solid for at least 24 hours. Don’t rush this step! For best results, use a high-quality protein powder that mixes well. Adjust sweetener to your personal preference. For an extra rich flavor, you can use a small amount of heavy cream in place of some milk. If your ice cream is too hard after re-spinning, let it sit at room temperature for 5-10 minutes before serving. Store any leftovers in the freezer; you may need to re-spin them before enjoying again.
