- 2 lbs bone-in, skin-on chicken thighs (or boneless, skinless chicken breasts/thighs)
- 1/4 cup honey
- 1/4 cup soy sauce (or tamari for gluten-free)
- 2 tablespoons fresh lemon juice
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 1 teaspoon lemon zest
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional, for a kick)
- Fresh parsley or cilantro, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C). Pat the chicken pieces dry with paper towels. Season lightly with salt and pepper. Arrange the chicken in a single layer in a large baking dish or on a rimmed baking sheet.
- In a medium bowl, whisk together the honey, soy sauce, lemon juice, olive oil, minced garlic, grated ginger, lemon zest, black pepper, and red pepper flakes (if using) until well combined. This is your luscious lemon honey glaze.
- Pour about half of the prepared glaze over the chicken, ensuring each piece is coated. Reserve the remaining glaze for basting. Bake the chicken for 20 minutes.
- Remove the baking dish from the oven and baste the chicken generously with the remaining glaze. Return to the oven and continue baking for another 10-15 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the glaze is beautifully caramelized and sticky. For extra crispiness, you can broil for the last 2-3 minutes, watching carefully to prevent burning.
- Once cooked, remove the chicken from the oven and let it rest for 5 minutes before serving. Garnish with fresh chopped parsley or cilantro for a burst of color and freshness.
Notes
For an even deeper flavor, marinate the chicken in half of the glaze for at least 30 minutes, or up to 4 hours in the refrigerator, before baking. This dish pairs wonderfully with fluffy rice, roasted vegetables, or a simple green salad. Store any leftovers in an airtight container in the refrigerator for up to 3 days.
