Ingredients
- 1 lb ground beef (80/20 lean)
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and freshly ground black pepper to taste
- 8 slices rye or sourdough bread
- 4 tbsp unsalted butter, softened
- 8 slices Monterey Jack or cheddar cheese
- For the Jalapeño Popper Filling:
- 4 oz cream cheese, softened
- 3-4 medium jalapeños, finely diced (remove seeds for less heat)
- 1/4 cup shredded sharp cheddar cheese
- 2 tbsp finely minced red onion
- 1 tbsp chopped fresh chives (optional)
- Pinch of salt and pepper
Instructions
- Prepare the Jalapeño Popper Filling: In a medium bowl, combine the softened cream cheese, diced jalapeños, shredded sharp cheddar cheese, minced red onion, chives (if using), salt, and pepper. Mix well until all ingredients are evenly incorporated. Set aside.
- Form the Patties: Divide the ground beef into four equal portions. Gently form each portion into a thin, oval-shaped patty, slightly larger than your bread slices, about 1/2 inch thick. Season both sides generously with garlic powder, onion powder, salt, and black pepper.
- Cook the Patties: Heat a large skillet or griddle over medium-high heat. Place the seasoned beef patties in the hot skillet and cook for 3-4 minutes per side, or until cooked to your desired doneness. Remove patties from the skillet and set aside on a plate, reserving any drippings in the pan.
- Assemble the Melts: Lightly butter one side of each bread slice. Place four slices of bread, butter-side down, in the skillet (add a little more butter if needed). Top each bread slice with one slice of Monterey Jack or cheddar cheese. Place a cooked beef patty on top of the cheese.
- Add the Filling: Evenly spread a generous spoonful of the prepared jalapeño popper filling over each beef patty. Top the filling with another slice of Monterey Jack or cheddar cheese.
- Grill to Perfection: Place the remaining four slices of buttered bread, butter-side up, on top of the assembled melts. Reduce heat to medium-low. Cook for 4-5 minutes per side, or until the bread is golden brown and crispy, and the cheese is thoroughly melted and gooey. You may need to press down gently with a spatula to ensure even contact and melting.
- Serve Hot: Carefully remove the Jalapeño Popper Patty Melts from the skillet. Cut in half if desired and serve immediately. Enjoy!
Notes
For an extra layer of flavor, caramelize some sliced onions and add them to the patty melt along with the popper filling. If you prefer less heat, remove all seeds and membranes from the jalapeños. For a spicier kick, leave some seeds in! You can also substitute ground turkey for a lighter option.
