- 2 (15-ounce) cans whole kernel corn, drained
- 1 (15-ounce) can creamed corn
- 1 cup sour cream (full-fat for best results)
- 1/2 cup unsalted butter, melted
- 1/4 cup granulated sugar
- 2 large eggs, lightly beaten
- 1/4 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 tablespoons honey, plus extra for drizzling
- Optional: 1/2 cup shredded cheddar cheese, for topping
- Optional: Fresh chives, chopped, for garnish
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or cooking spray. This honey glazed corn casserole recipe starts with a well-prepared dish.
- In a large mixing bowl, combine the drained whole kernel corn, creamed corn, sour cream, melted butter, sugar, and lightly beaten eggs. Whisk well until thoroughly combined.
- In a separate small bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add the dry ingredients to the wet corn mixture, mixing until just combined and no lumps of flour remain. Be careful not to overmix.
- Pour the corn mixture evenly into the prepared baking dish. Drizzle the 2 tablespoons of honey evenly over the top of the casserole. If using, sprinkle with shredded cheddar cheese at this point.
- Bake for 40-45 minutes, or until the casserole is golden brown on top, set in the center, and bubbly around the edges. A knife inserted into the center should come out mostly clean. The honey glaze will be beautifully caramelized.
- Remove from the oven and let it rest for 5-10 minutes before serving. For an extra touch of sweetness and shine, drizzle a little more honey over the warm casserole just before serving. Garnish with fresh chopped chives, if desired.
Notes
For a spicier kick, add a pinch of cayenne pepper to the corn mixture. You can also experiment with adding crumbled, cooked turkey turkey turkey bacon for a smoky flavor. Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days. Reheat gently in the oven or microwave. This casserole is fantastic alongside roasted chicken, grilled fish, or as a Thanksgiving staple.
