Ingredients
- 2 pounds carrots, peeled and cut into 1-inch pieces
- 4 tablespoons unsalted butter, melted
- 3 cloves garlic, minced
- 2 tablespoons honey
- 1 tablespoon fresh parsley, chopped
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, combine the melted butter, minced garlic, honey, salt, and pepper. Whisk until well combined.
- Add the carrots to the bowl and toss to coat evenly with the honey garlic butter mixture.
- Spread the carrots in a single layer on the prepared baking sheet.
- Roast for 20-25 minutes, or until the carrots are tender and slightly caramelized, flipping halfway through.
- Remove from oven and sprinkle with fresh parsley. Serve immediately.
Notes
For extra flavor, try adding a pinch of red pepper flakes. Store leftover roasted carrots in an airtight container in the refrigerator for up to 3 days. To reheat, bake in a preheated oven at 350°F (175°C) for 10-15 minutes, or until heated through.
