Ingredients
- 4 cups corn kernels (frozen, thawed, or fresh)
- 1/4 cup unsalted butter
- 2 tablespoons honey
- 1/4 cup heavy cream
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Fresh parsley or chives, chopped, for garnish (optional)
Instructions
- In a large cast-iron skillet or heavy-bottomed pan, melt the unsalted butter over medium heat until fragrant.
- Add the corn kernels to the skillet, stirring to coat them evenly with the butter. Cook for 8-10 minutes, stirring occasionally, until the corn is tender and slightly caramelized in spots.
- Reduce the heat to low. Pour in the heavy cream and stir in the honey, salt, and black pepper.
- Continue to cook for another 3-5 minutes, stirring gently, allowing the sauce to thicken slightly and the flavors to meld beautifully.
- Taste and adjust seasoning if necessary. Remove from heat.
- Garnish with freshly chopped parsley or chives, if desired, and serve immediately as a warm, delightful side dish.
Notes
For an extra layer of flavor, consider adding a pinch of smoked paprika or a dash of hot sauce for a subtle kick. Fresh corn cut straight from the cob will yield the best texture and sweetness, but high-quality frozen corn works wonderfully too. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated gently on the stovetop or in the microwave.
