  • 1/2 teaspoon citric acid powder (for tartness)
  • Optional: Food coloring (natural options like beet powder for red, turmeric for yellow)
  • Optional: Granulated sugar for coating

Instructions

  1. In a small bowl, sprinkle the agar agar powder over 1/2 cup cold water. Let it bloom for 5-10 minutes until it becomes thick and spongy.
  2. In a medium saucepan, combine 1 cup granulated sugar and 1/2 cup boiling water. Heat over medium-low heat, stirring constantly, until the sugar is completely dissolved and the mixture is clear. Do not boil vigorously.
  3. Remove the saucepan from the heat. Add the bloomed agar agar to the hot sugar mixture, stirring continuously until the agar agar is fully dissolved and there are no lumps.
  4. Stir in the concentrated fruit juice and citric acid powder. If using food coloring, add a few drops now and mix well until desired color is achieved.
  5. Carefully pour the mixture into silicone candy molds (small shapes work best). You can lightly grease molds with a neutral oil if not using silicone.
  6. Transfer the molds to the refrigerator and chill for at least 2-3 hours, or until the candies are firm and set.
  7. Once set, gently pop the jelly candies out of their molds.
  8. (Optional) For a classic finish, roll the candies in granulated sugar immediately after unmolding.
  9. Store in an airtight container at room temperature for up to a week, or in the refrigerator for longer freshness.
