  • 1/2 cup fresh or frozen blueberries
  • 1/4 cup honey, plus more to taste
  • 1/2 teaspoon lemon juice
  • Pinch of sea salt
  • 1/4 teaspoon vanilla extract (optional)

Instructions

  1. In a small saucepan over medium heat, combine the blueberries, 1 tablespoon of the honey, and lemon juice. Cook, stirring occasionally, for 5-7 minutes, or until the blueberries burst and the mixture thickens slightly into a jam-like consistency. Remove from heat and let cool completely.
  2. While the blueberry mixture cools, place the softened butter in the bowl of a stand mixer fitted with the whisk attachment, or use a hand mixer. Whip the butter on medium-high speed for 3-5 minutes, until light, fluffy, and pale in color.
  3. Add the remaining 3 tablespoons of honey, the pinch of sea salt, and vanilla extract (if using) to the whipped butter. Continue to whip on medium speed for another 1-2 minutes until thoroughly combined.
