Ingredients
- 1 cup (2 sticks) unsalted butter, softened
- 1/2 cup fresh or frozen blueberries
- 1/4 cup honey, plus more to taste
- 1/2 teaspoon lemon juice
- Pinch of sea salt
- 1/4 teaspoon vanilla extract (optional)
Instructions
- In a small saucepan over medium heat, combine the blueberries, 1 tablespoon of the honey, and lemon juice. Cook, stirring occasionally, for 5-7 minutes, or until the blueberries burst and the mixture thickens slightly into a jam-like consistency. Remove from heat and let cool completely.
- While the blueberry mixture cools, place the softened butter in the bowl of a stand mixer fitted with the whisk attachment, or use a hand mixer. Whip the butter on medium-high speed for 3-5 minutes, until light, fluffy, and pale in color.
- Add the remaining 3 tablespoons of honey, the pinch of sea salt, and vanilla extract (if using) to the whipped butter. Continue to whip on medium speed for another 1-2 minutes until thoroughly combined.
- Gently fold in the cooled blueberry mixture into the whipped butter using a spatula. Mix just until streaks of blueberries are visible and evenly distributed; avoid overmixing if you prefer a marbled look, or mix more thoroughly for a uniform color.
- Transfer the blueberry honey butter to an airtight container. Serve immediately or refrigerate for later use. The flavors will deepen as it chills.
Notes
For best results, ensure your butter is truly softened to room temperature for optimal whipping. If using frozen blueberries, there’s no need to thaw them first. This butter is fantastic on toast, pancakes, waffles, muffins, quick breads, or even melted over sweet potatoes. Store in the refrigerator for up to two weeks or freeze for up to two months. If freezing, allow to thaw in the refrigerator overnight before use. Feel free to adjust the amount of honey to your preferred sweetness level.
