  • 1/2 teaspoon ground allspice
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon fresh lemon juice
  • For the Cake Batter:
  • 1 3/4 cups (210g) all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 cup (113g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup (120ml) whole milk

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan, or line with parchment paper leaving an overhang on the sides for easy lifting.
  2. Prepare the Crumb Topping: In a medium bowl, whisk together the flour, granulated sugar, brown sugar, cinnamon, and nutmeg. Pour in the melted butter and stir with a fork until large, moist crumbs form. Set aside.
  3. Prepare the Spiced Apple Filling: In a large bowl, combine the sliced apples, brown sugar, flour, cinnamon, allspice, nutmeg, and lemon juice. Toss gently until the apples are evenly coated. Set aside.
  4. Prepare the Cake Batter: In a medium bowl, whisk together the flour, baking powder, salt, cinnamon, nutmeg, and cloves. Set aside.
  5. In a large bowl, using an electric mixer, cream together the softened butter and granulated sugar until light and fluffy (about 2-3 minutes). Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
