- For the Crumb Topping:
- 1 cup (120g) all-purpose flour
- 1/2 cup (100g) granulated sugar
- 1/4 cup (50g) packed light brown sugar
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg

- 4 medium-sized apples (about 4 cups sliced), such as Honeycrisp or Granny Smith, peeled, cored, and thinly sliced
- 1/4 cup (50g) packed light brown sugar
- 1 tablespoon all-purpose flour
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground allspice
- 1/4 teaspoon ground nutmeg
- 1 tablespoon fresh lemon juice
- For the Cake Batter:
- 1 3/4 cups (210g) all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/2 cup (113g) unsalted butter, softened
- 1 cup (200g) granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup (120ml) whole milk
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan, or line with parchment paper leaving an overhang on the sides for easy lifting.
- Prepare the Crumb Topping: In a medium bowl, whisk together the flour, granulated sugar, brown sugar, cinnamon, and nutmeg. Pour in the melted butter and stir with a fork until large, moist crumbs form. Set aside.
- Prepare the Spiced Apple Filling: In a large bowl, combine the sliced apples, brown sugar, flour, cinnamon, allspice, nutmeg, and lemon juice. Toss gently until the apples are evenly coated. Set aside.
- Prepare the Cake Batter: In a medium bowl, whisk together the flour, baking powder, salt, cinnamon, nutmeg, and cloves. Set aside.
- In a large bowl, using an electric mixer, cream together the softened butter and granulated sugar until light and fluffy (about 2-3 minutes). Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Gradually add the dry ingredient mixture to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix on low speed until just combined, being careful not to overmix.
- Pour the cake batter into the prepared baking pan and spread evenly. Arrange the spiced apple slices evenly over the batter.
- Evenly sprinkle the reserved crumb topping over the apples.
- Bake for 50-60 minutes, or until a wooden skewer inserted into the center of the cake comes out clean (avoiding the apple sections). The crumb topping should be golden brown and the apples tender.
- Let the cake cool in the pan on a wire rack for at least 30 minutes before slicing and serving. This allows the cake to set and the flavors to meld beautifully. Enjoy warm or at room temperature!
