- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts or thighs, diced into 1/2-inch pieces

- 1 bell pepper (any color), thinly sliced
- 1 cup fresh pineapple, diced
- 1 tablespoon low-sodium taco seasoning
- 1/4 cup low-sodium chicken broth
- 8 small corn or flour tortillas
- 1/4 cup fresh cilantro, chopped
- 1 lime, cut into wedges

Instructions
- Heat olive oil in a large skillet or non-stick pan over medium-high heat. Add diced chicken and cook, stirring occasionally, until browned and cooked through, about 5-7 minutes. Remove chicken from the pan and set aside.
- Add sliced red onion and bell pepper to the same skillet. Sauté for 3-5 minutes until softened.
- Stir in the diced pineapple and taco seasoning. Cook for another 2-3 minutes, allowing the flavors to meld and the pineapple to slightly caramelize.
- Return the cooked chicken to the skillet. Pour in the chicken broth and stir everything together, scraping up any browned bits from the bottom of the pan. Simmer for 2-3 minutes until the sauce slightly thickens and coats the chicken and pineapple mixture.
- While the chicken mixture simmers, warm the tortillas according to package directions (microwave, dry skillet, or oven).
- Spoon the pineapple chicken mixture evenly into the warm tortillas.
- Garnish with fresh cilantro, a generous squeeze of lime, and any optional toppings like diced avocado or thinly sliced jalapeño. Serve immediately and enjoy!
Notes
For an extra kick, add a pinch of chili flakes to the chicken mixture during cooking. You can also prepare the chicken and pineapple mixture ahead of time and store it in the refrigerator for up to 3 days, reheating gently before serving.
