Ingredients
- 2 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
- 1/4 cup olive oil
- 1/4 cup lemon juice (freshly squeezed)
- 2 cloves garlic, minced
- 2 teaspoons dried oregano
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Wooden or metal skewers
Instructions
- In a medium bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, thyme, salt, and pepper.
- Add the chicken cubes to the marinade and toss to coat thoroughly. Ensure all pieces are evenly covered.
- Cover the bowl and marinate in the refrigerator for at least 30 minutes, or up to 4 hours for maximum flavor. The longer it marinates, the more flavorful the chicken will be.
- Preheat your grill to medium-high heat. Thread the marinated chicken onto skewers.
- Grill the souvlaki skewers for 15-20 minutes, turning occasionally, until the chicken is cooked through and lightly browned. Ensure the internal temperature reaches 165°F (74°C).
- Remove from grill and serve immediately. Garnish with fresh lemon wedges and a sprinkle of oregano, if desired.
Notes
For best results, use high-quality olive oil and freshly squeezed lemon juice. If you don’t have fresh lemons, bottled lemon juice can be used, but the flavor will be slightly different. You can also add a pinch of red pepper flakes to the marinade for a little heat. Serve the souvlaki with pita bread, tzatziki sauce, and a Greek salad for a complete meal. Leftover souvlaki can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently in a skillet or microwave before serving.
