  • Total Time: 35 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon dried oregano
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 flatbreads
  • 1 cup hummus
  • 1 cup chopped cucumber
  • 1 cup chopped tomatoes
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped red onion
  • 1/4 cup fresh parsley, chopped
  • Lemon wedges, for serving

Instructions

  1. Preheat oven to 400°F (200°C). In a bowl, combine chicken, olive oil, lemon juice, oregano, garlic powder, salt, and pepper. Marinate for at least 15 minutes.
  2. Spread hummus evenly over each flatbread.
  3. Top flatbreads with marinated chicken, cucumber, tomatoes, red onion, and feta cheese.
  4. Bake for 15-20 minutes, or until chicken is cooked through and flatbreads are lightly golden.
  5. Garnish with fresh parsley and serve immediately with lemon wedges.

Notes

For a spicier kick, add a pinch of red pepper flakes to the chicken marinade. Leftovers can be stored in the refrigerator for up to 2 days. Reheat in the oven or microwave. You can substitute the feta cheese with goat cheese or halloumi. Feel free to add other vegetables like bell peppers or olives.
