Ingredients
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 tablespoon dried oregano
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 flatbreads
- 1 cup hummus
- 1 cup chopped cucumber
- 1 cup chopped tomatoes
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped red onion
- 1/4 cup fresh parsley, chopped
- Lemon wedges, for serving
Instructions
- Preheat oven to 400°F (200°C). In a bowl, combine chicken, olive oil, lemon juice, oregano, garlic powder, salt, and pepper. Marinate for at least 15 minutes.
- Spread hummus evenly over each flatbread.
- Top flatbreads with marinated chicken, cucumber, tomatoes, red onion, and feta cheese.
- Bake for 15-20 minutes, or until chicken is cooked through and flatbreads are lightly golden.
- Garnish with fresh parsley and serve immediately with lemon wedges.
Notes
For a spicier kick, add a pinch of red pepper flakes to the chicken marinade. Leftovers can be stored in the refrigerator for up to 2 days. Reheat in the oven or microwave. You can substitute the feta cheese with goat cheese or halloumi. Feel free to add other vegetables like bell peppers or olives.
