  • Total Time: 20 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 4 large butter croissants
  • 2 cups cooked chicken breast, shredded or diced
  • 1/2 cup creamy Caesar dressing
  • 1/2 cup shaved or grated Parmesan cheese
  • 1 cup crisp romaine lettuce, thinly sliced or torn
  • 1/4 teaspoon black pepper
  • Optional: 1 tablespoon fresh parsley, chopped, for garnish

Instructions

  1. In a medium bowl, combine the shredded or diced cooked chicken breast with the creamy Caesar dressing and black pepper. Stir until the chicken is well coated.
  2. Preheat a toaster oven or conventional oven to 350°F (175°C). Carefully slice each croissant horizontally, almost all the way through, creating a pocket.
  3. Place the sliced croissants on a baking sheet. Toast in the preheated oven for 3-5 minutes, or until lightly golden and warmed through. Watch carefully to prevent burning.
  4. Once toasted, gently open each croissant. Line the bottom half with a generous layer of thinly sliced romaine lettuce.
  5. Spoon a portion of the Caesar-coated chicken mixture evenly over the lettuce in each croissant.
  6. Sprinkle a generous amount of shaved Parmesan cheese over the chicken mixture.
  7. Close the croissants. If desired, garnish with fresh chopped parsley before serving immediately.

Notes

For an extra crunch, lightly toast the croissants in a pan with a touch of butter before filling. Make it spicy by adding a pinch of red pepper flakes to the chicken mixture. Pre-cooked rotisserie chicken is a fantastic time-saver for this recipe. Store any leftover chicken Caesar mixture separately in the refrigerator for up to 2 days. Assemble sandwiches fresh for best results.
