Ingredients
- 4 large butter croissants
- 2 cups cooked chicken breast, shredded or diced
- 1/2 cup creamy Caesar dressing
- 1/2 cup shaved or grated Parmesan cheese
- 1 cup crisp romaine lettuce, thinly sliced or torn
- 1/4 teaspoon black pepper
- Optional: 1 tablespoon fresh parsley, chopped, for garnish
Instructions
- In a medium bowl, combine the shredded or diced cooked chicken breast with the creamy Caesar dressing and black pepper. Stir until the chicken is well coated.
- Preheat a toaster oven or conventional oven to 350°F (175°C). Carefully slice each croissant horizontally, almost all the way through, creating a pocket.
- Place the sliced croissants on a baking sheet. Toast in the preheated oven for 3-5 minutes, or until lightly golden and warmed through. Watch carefully to prevent burning.
- Once toasted, gently open each croissant. Line the bottom half with a generous layer of thinly sliced romaine lettuce.
- Spoon a portion of the Caesar-coated chicken mixture evenly over the lettuce in each croissant.
- Sprinkle a generous amount of shaved Parmesan cheese over the chicken mixture.
- Close the croissants. If desired, garnish with fresh chopped parsley before serving immediately.
Notes
For an extra crunch, lightly toast the croissants in a pan with a touch of butter before filling. Make it spicy by adding a pinch of red pepper flakes to the chicken mixture. Pre-cooked rotisserie chicken is a fantastic time-saver for this recipe. Store any leftover chicken Caesar mixture separately in the refrigerator for up to 2 days. Assemble sandwiches fresh for best results.
