- **Caramelize the Onions (Optional but Recommended):** Heat olive oil in a large skillet over medium-low heat. Add the thinly sliced yellow onion and cook slowly, stirring occasionally, for 15-20 minutes until deeply golden brown and very tender. If desired, sprinkle with 1/2 teaspoon sugar halfway through to aid caramelization. Set aside.
- **Prepare the Au Jus:** While onions caramelize, combine beef broth, onion powder, garlic powder, black pepper, and Worcestershire sauce (if using) in a medium saucepan. Bring to a simmer over medium heat, then reduce heat to low and keep warm while you assemble the roll-ups.
- **Preheat Oven & Assemble Tortillas:** Preheat your oven to 375°F (190°C). Lightly grease a large baking dish (9×13 inch) or line a baking sheet with parchment paper. Lay out a flour tortilla on a clean surface. Place 1-2 slices of provolone cheese on one side of the tortilla, leaving a small border. Layer about 2 ounces of roast beef over the cheese, then a spoonful of caramelized onions (if using).
- **Roll and Arrange:** Tightly roll the tortilla from the side with the fillings, creating a snug log. Repeat with the remaining tortillas and fillings. Arrange the rolled tortillas seam-side down in the prepared baking dish or on the baking sheet.
- **Bake to Perfection:** Brush the tops of the roll-ups with melted butter. Bake for 15-20 minutes, or until the tortillas are lightly golden and crispy, and the cheese inside is bubbly and fully melted. For extra crispiness, you can broil for the last 1-2 minutes, watching carefully to prevent burning.
- **Serve:** Carefully remove the French Dip Tortilla Roll-Ups from the oven. Slice each roll-up in half or into thirds for easier dipping, if desired. Garnish with fresh chopped parsley. Serve immediately with the warm au jus in small individual ramekins for dipping. Enjoy!
