- 8 large eggs
- 1 cup (225g) full-fat cottage cheese
- 1/4 cup shredded Monterey Jack cheese, or mild cheddar
- 2 tablespoons finely diced bell pepper (any color)
- 2 tablespoons finely chopped fresh chives or green onions
- 1/2 teaspoon fine sea salt
- 1/4 teaspoon freshly ground black pepper
- Pinch of garlic powder (optional)
- Cooking spray or light oil for greasing
Instructions
- Preheat your oven to 325°F (160°C). Lightly grease a 12-cup standard muffin tin with cooking spray or a small amount of oil to prevent sticking.
- In a large mixing bowl, whisk the eggs vigorously until they are well combined and slightly frothy, about 1 minute.
- Add the cottage cheese, shredded Monterey Jack, diced bell pepper, fresh chives, salt, black pepper, and garlic powder (if using) to the whisked eggs. Stir gently with a spoon or spatula until all the ingredients are just combined. Be careful not to overmix.
- Carefully pour the egg mixture evenly into the prepared muffin cups, filling each about three-quarters full. Ensure any solid ingredients are distributed well among the cups.
- Bake for 20-25 minutes, or until the egg bites are set, beautifully puffy, and lightly golden around the edges. A knife inserted into the center should come out clean.
- Remove the muffin tin from the oven and allow the egg bites to cool in the tin for 2-3 minutes. This helps them set and makes them easier to remove.
- Gently loosen the edges with a thin knife or spoon and transfer the fluffy egg bites to a serving platter. Serve warm or at room temperature.
Notes
For an even creamier texture, you can briefly blend the cottage cheese in a food processor before adding it to the eggs. Feel free to experiment with other add-ins like sautéed spinach, cooked turkey sausage bits, or a dash of your favorite hot sauce. Cooled egg bites can be stored in an airtight container in the refrigerator for up to 3-4 days. Reheat gently in the microwave for 30-60 seconds.
