Instructions

  1. Preheat your oven to 400°F (200°C). Line a large, rimmed baking sheet with parchment paper for easy cleanup.
  2. In a large bowl, combine the sweet potato cubes and red onion wedges. Drizzle with olive oil, salt, and black pepper. Toss until everything is evenly coated.
  3. Spread the sweet potatoes and red onion in a single layer on the prepared baking sheet. Roast for 15 minutes, or until the sweet potatoes are starting to soften and lightly brown.
  4. While the vegetables are roasting, prepare the honey garlic sauce. In a small bowl, whisk together the honey, minced garlic, low-sodium soy sauce, apple cider vinegar, grated ginger (if using), and red pepper flakes (if using) until well combined.
