Ingredients
- 2 (6-ounce) cod fillets
- 2 tablespoons honey
- 2 cloves garlic, minced
- 1 tablespoon soy sauce (low sodium)
- 1 teaspoon lemon juice
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 1 teaspoon olive oil
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 400°F (200°C). Lightly grease a baking dish with olive oil.
- In a small bowl, whisk together honey, minced garlic, soy sauce, lemon juice, black pepper, and red pepper flakes (if using).
- Place cod fillets in the prepared baking dish. Pour the honey garlic marinade evenly over the cod.
- Bake for 8-12 minutes, or until the cod is cooked through and flakes easily with a fork. Cooking time will vary depending on the thickness of the fillets.
- Garnish with fresh parsley and serve immediately.
Notes
For extra flavor, marinate the cod for up to 30 minutes in the refrigerator before baking. Serve with rice, roasted vegetables, or a salad for a complete meal.
