- 2 cups (480g) full-fat Greek yogurt
- 1/4 cup (60ml) maple syrup or honey
- 1 teaspoon vanilla extract
- Pinch of salt
- 1 cup (150g) fresh or frozen berries (strawberries, blueberries, raspberries), optional
- Zest of 1 lemon, optional
Instructions
- In a large bowl, combine the Greek yogurt, maple syrup (or honey), vanilla extract, and a pinch of salt. Whisk until thoroughly combined and smooth.
- If using, gently fold in the fresh or frozen berries and lemon zest. Be careful not to overmix if you want distinct swirls of fruit.
- Pour the mixture into a shallow freezer-safe container or a loaf pan. Smooth the top with a spatula.
- Cover the container tightly with a lid or plastic wrap, ensuring it's freezer-safe. Place in the freezer for at least 3 hours, or until firm.
- Before serving, let the frozen Greek yogurt sit at room temperature for 5-10 minutes to soften slightly for easier scooping. Serve immediately and enjoy!
Notes
For extra creaminess, stir the mixture halfway through the freezing process (after about 1.5 hours). Get creative with toppings like chopped nuts, granola, chocolate shavings, or a drizzle of extra maple syrup. This recipe is also fantastic with a spoonful of cocoa powder for a chocolate version, or a swirl of fruit puree instead of whole berries. Store leftovers in an airtight container in the freezer for up to 2 weeks.
