  • Total Time: 0 hours
  • Yield: 6 servings 1x

Ingredients

Scale
  • 1.5 lbs smoked beef sausage, cut into 1-inch thick rounds
  • 2 lbs Yukon Gold or red potatoes, scrubbed and cut into 1-inch cubes (peeling optional)
  • 1 lb fresh or frozen green beans, trimmed
  • 1 large yellow onion, chopped
  • 4 cloves garlic, minced
  • 2 cups chicken or vegetable broth (low sodium preferred)
  • 1 tablespoon olive oil
  • 1 tablespoon paprika
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon kosher salt (adjust to taste, especially if using regular broth)
  • 1 tablespoon brown sugar (optional, for a hint of sweetness)
  • 2 tablespoons cornstarch mixed with 2 tablespoons cold water (for thickening, optional)

Instructions

  1. In a large slow cooker, add the chopped potatoes, green beans, and chopped onion. Distribute evenly.
  2. In a small bowl, whisk together the chicken or vegetable broth, olive oil, paprika, dried thyme, black pepper, kosher salt, and brown sugar (if using). Pour this mixture over the vegetables in the slow cooker.
  3. Arrange the cut smoked beef sausage rounds on top of the vegetables. Gently stir to combine all ingredients, ensuring the sausage is slightly submerged in the liquid.
  4. Cover the slow cooker and cook on HIGH for 4 hours, or on LOW for 8 hours, or until the potatoes are fork-tender and the green beans are cooked through.
  5. If you prefer a thicker sauce, about 30 minutes before serving, stir in the cornstarch slurry (cornstarch mixed with cold water). Stir well and continue cooking until the sauce has thickened. This step is optional.
  6. Taste and adjust seasonings if necessary. Serve hot directly from the slow cooker and enjoy this satisfying one-pot meal!

Notes

Feel free to add other root vegetables like carrots or parsnips. For a touch of heat, add a pinch of red pepper flakes. Leftovers store well in an airtight container in the refrigerator for up to 3-4 days. This dish is fantastic on its own, or you can serve it with a side of crusty bread to soak up the delicious sauce.
