Ingredients
- 1 tablespoon olive oil
- 1 pound lean ground beef
- 1 medium yellow onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- 1 head green cabbage (about 2-2.5 lbs), cored and thinly sliced or shredded
- 1/4 cup beef broth (optional, for extra moisture)
- 1/4 cup ketchup (or sugar-free ketchup)
- 2 tablespoons yellow mustard
- 1 tablespoon apple cider vinegar
- 1 cup shredded sharp cheddar cheese
- 1/2 cup shredded mozzarella cheese
- Fresh parsley, chopped (for garnish, optional)
Instructions
- Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish or prepare a large oven-safe skillet.
- In a large skillet (if not using oven-safe), heat olive oil over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until it's fully browned. Drain any excess fat.
- Add the chopped yellow onion to the skillet with the beef and cook for 3-5 minutes until it softens. Stir in the minced garlic and cook for another minute until fragrant.
- Stir in the salt, black pepper, garlic powder, onion powder, and smoked paprika. Mix well to ensure the beef and onions are thoroughly coated with the seasonings.
- Add the thinly sliced cabbage to the skillet. Cook, stirring frequently, for 5-7 minutes, until the cabbage begins to wilt down and soften slightly.
- Stir in the beef broth (if using), ketchup, yellow mustard, and apple cider vinegar. Mix all ingredients thoroughly until combined.
- Transfer the beef and cabbage mixture to your prepared baking dish, or spread it evenly in your oven-safe skillet.
- Evenly sprinkle the shredded sharp cheddar cheese and mozzarella cheese over the top of the mixture.
- Bake for 20-25 minutes, or until the cheese is melted, bubbly, and beautifully golden brown, and the edges of the cabbage are slightly caramelized and crispy.
- Remove from the oven and let rest for a few minutes before serving. Garnish with fresh chopped parsley, if desired.
Notes
For an extra kick, add a pinch of red pepper flakes with the seasonings. Feel free to swap cheddar for Monterey Jack or a pepper jack cheese for a spicier twist. This bake reheats beautifully, making it perfect for meal prep; simply store leftovers in an airtight container in the refrigerator for up to 3 days. For a vegetarian version, use plant-based ground crumble and vegetable broth. Ensure the cabbage is thinly sliced for the best tender-crisp texture.
