  • Total Time: 35 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound lean ground beef
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1 head green cabbage (about 2-2.5 lbs), cored and thinly sliced or shredded
  • 1/4 cup beef broth (optional, for extra moisture)
  • 1/4 cup ketchup (or sugar-free ketchup)
  • 2 tablespoons yellow mustard
  • 1 tablespoon apple cider vinegar
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • Fresh parsley, chopped (for garnish, optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish or prepare a large oven-safe skillet.
  2. In a large skillet (if not using oven-safe), heat olive oil over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until it's fully browned. Drain any excess fat.
  3. Add the chopped yellow onion to the skillet with the beef and cook for 3-5 minutes until it softens. Stir in the minced garlic and cook for another minute until fragrant.
  4. Stir in the salt, black pepper, garlic powder, onion powder, and smoked paprika. Mix well to ensure the beef and onions are thoroughly coated with the seasonings.
  5. Add the thinly sliced cabbage to the skillet. Cook, stirring frequently, for 5-7 minutes, until the cabbage begins to wilt down and soften slightly.
  6. Stir in the beef broth (if using), ketchup, yellow mustard, and apple cider vinegar. Mix all ingredients thoroughly until combined.
  7. Transfer the beef and cabbage mixture to your prepared baking dish, or spread it evenly in your oven-safe skillet.
  8. Evenly sprinkle the shredded sharp cheddar cheese and mozzarella cheese over the top of the mixture.
  9. Bake for 20-25 minutes, or until the cheese is melted, bubbly, and beautifully golden brown, and the edges of the cabbage are slightly caramelized and crispy.
  10. Remove from the oven and let rest for a few minutes before serving. Garnish with fresh chopped parsley, if desired.

Notes

For an extra kick, add a pinch of red pepper flakes with the seasonings. Feel free to swap cheddar for Monterey Jack or a pepper jack cheese for a spicier twist. This bake reheats beautifully, making it perfect for meal prep; simply store leftovers in an airtight container in the refrigerator for up to 3 days. For a vegetarian version, use plant-based ground crumble and vegetable broth. Ensure the cabbage is thinly sliced for the best tender-crisp texture.
