Ingredients
- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 (16 oz) container tzatziki sauce
- 1 cup cooked rice
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped fresh dill
- 1/4 cup chopped red onion
- 1 tablespoon olive oil
- 1 teaspoon lemon juice
- Salt and pepper to taste
- Optional: sliced cucumber, cherry tomatoes for garnish
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
- Spread the cooked rice evenly over the bottom of the baking dish.
- In a bowl, combine the chicken pieces with tzatziki sauce, olive oil, lemon juice, salt, and pepper. Mix well to coat.
- Pour the chicken mixture over the rice in the baking dish, spreading evenly.
- Sprinkle with feta cheese, dill, and red onion.
- Bake for 30 minutes, or until the chicken is cooked through and the cheese is melted and slightly golden.
- Let stand for 5 minutes before serving. Garnish with sliced cucumber and cherry tomatoes, if desired.
Notes
For a richer flavor, marinate the chicken in the tzatziki sauce for at least 30 minutes before baking. You can also add other vegetables like bell peppers, zucchini, or spinach to the casserole. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave until warmed through.
