- 1 tbsp honey or agave nectar

Instructions
- Preheat your oven to 400°F (200°C) or your air fryer to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease your air fryer basket.
- Pat the salmon cubes thoroughly dry with paper towels. This is crucial for achieving maximum crispiness.
- In a medium bowl, combine the cornstarch, garlic powder, smoked paprika, salt, and black pepper. Add the dried salmon cubes and toss gently until each piece is evenly coated.
- Arrange the coated salmon cubes in a single layer on the prepared baking sheet or in the air fryer basket, ensuring they do not touch. This allows for even cooking and crisping.
- Bake for 12-15 minutes, or air fry for 8-10 minutes, flipping halfway through, until the salmon is cooked through, flaky, and golden brown with crispy edges. Cooking time may vary based on your appliance and salmon thickness.
- While the salmon cooks, prepare the Bang Bang sauce. In a small bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, honey (or agave nectar), and fresh lime juice until smooth and well combined.
- Once the salmon is cooked, transfer the crispy bites to a clean bowl. Pour the Bang Bang sauce over the salmon and gently toss until all pieces are thoroughly coated.
- Serve immediately, garnished with fresh chopped green onions and a sprinkle of sesame seeds. Enjoy as a standalone appetizer or over rice for a complete meal!
Notes
For extra crispiness, ensure salmon is very dry before coating. If air frying, work in batches if necessary to avoid overcrowding the basket. You can adjust the spice level of the Bang Bang sauce by adding more or less sriracha. Leftovers are delicious but best enjoyed fresh for optimal texture.
