  • 4 cups chopped fresh kale, tough stems removed
  • 1 cup heavy cream

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add the turkey Italian sausage, breaking it up with a spoon, and cook until thoroughly browned, about 5-7 minutes. Drain any excess fat and set the cooked sausage aside.
  2. To the same pot, add the diced yellow onion and cook until softened and translucent, about 5 minutes. Stir in the minced garlic and red pepper flakes (if using), cooking for another minute until fragrant.
  3. Pour in the chicken broth, then add the thinly sliced or diced potatoes, salt, and black pepper. Bring the mixture to a boil, then reduce heat to a simmer, cover, and cook for 10-15 minutes, or until the potatoes are tender when pierced with a fork.
  4. Return the cooked turkey sausage to the pot. Stir in the chopped fresh kale and continue to simmer for 3-5 minutes, or until the kale has wilted to your desired tenderness.
