Ingredients
- 1 tablespoon olive oil
- 1 pound mild turkey Italian sausage, casings removed
- 1 large yellow onion, diced
- 4 cloves garlic, minced
- 6 cups chicken broth (or vegetable broth)
- 4 medium Russet potatoes, peeled and thinly sliced or diced
- 1 teaspoon red pepper flakes (optional, adjust to taste)
- 1/2 teaspoon black pepper
- 1 teaspoon salt (or to taste)
- 4 cups chopped fresh kale, tough stems removed
- 1 cup heavy cream
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add the turkey Italian sausage, breaking it up with a spoon, and cook until thoroughly browned, about 5-7 minutes. Drain any excess fat and set the cooked sausage aside.
- To the same pot, add the diced yellow onion and cook until softened and translucent, about 5 minutes. Stir in the minced garlic and red pepper flakes (if using), cooking for another minute until fragrant.
- Pour in the chicken broth, then add the thinly sliced or diced potatoes, salt, and black pepper. Bring the mixture to a boil, then reduce heat to a simmer, cover, and cook for 10-15 minutes, or until the potatoes are tender when pierced with a fork.
- Return the cooked turkey sausage to the pot. Stir in the chopped fresh kale and continue to simmer for 3-5 minutes, or until the kale has wilted to your desired tenderness.
- Remove the pot from the heat. Gradually stir in the heavy cream until fully incorporated and the soup is beautifully creamy. Taste and adjust seasonings as needed.
- Serve hot, perhaps with a sprinkle of freshly grated Parmesan cheese on the side (optional) and some crusty bread for dipping. Enjoy your homemade Zuppa Toscana!
Notes
For a thicker soup, mash a few potato slices against the side of the pot before adding cream. To make it vegetarian, omit the sausage and use vegetable broth, adding cannellini beans for protein. This soup stores well in the refrigerator for up to 3 days; reheat gently on the stovetop, adding a splash of broth or cream if needed.
