  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cans (10 oz each) refrigerated biscuit dough

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  2. Heat olive oil in a large skillet over medium heat. Add chicken and cook until browned on all sides, about 5-7 minutes. Remove chicken from skillet and set aside.
  3. Add onion to the skillet and cook until softened, about 3-5 minutes. Add garlic and cook for 1 minute more.
  4. Pour in chicken broth and scrape up any browned bits from the bottom of the skillet. Bring to a simmer.
  5. Stir in heavy cream, Parmesan cheese, parsley, oregano, salt, and pepper. Cook until sauce is thickened, about 5 minutes.
  6. Return chicken to the skillet and stir to coat with the sauce.
  7. Cut each biscuit in half. Flatten each half slightly.
  8. Spoon a generous amount of chicken mixture onto each biscuit half. Fold the biscuit over to form a pillow and pinch the edges to seal.
  9. Place the chicken pillows seam-side down in the prepared baking dish.
  10. Bake for 20-25 minutes, or until golden brown and the biscuits are cooked through.
  11. Let cool slightly before serving. Garnish with extra parsley, if desired.

Notes

For a richer flavor, use freshly grated Parmesan cheese. You can substitute dried thyme or Italian seasoning for the oregano. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave. You can add vegetables like mushrooms or spinach to the chicken mixture. Freezing is not recommended.
