- 8 ounces cream cheese, softened
- 1/2 cup powdered sugar
- 1/4 cup fresh lemon juice
- 2 teaspoons lemon zest
- 1/4 teaspoon vanilla extract
- 12 ounces white chocolate, melted

Instructions
- In a large bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
- Add the powdered sugar, lemon juice, lemon zest, and vanilla extract to the cream cheese. Beat until well combined and smooth.
- Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the mixture to firm up. This will make it easier to roll into truffles.
- Remove the cream cheese mixture from the refrigerator. Use a small cookie scoop or spoon to portion out the mixture. Roll each portion into a smooth ball.
- Place the rolled truffles on a baking sheet lined with parchment paper.
- Melt the white chocolate in a double boiler or in the microwave in 30-second intervals, stirring in between, until smooth. Be careful not to overheat the chocolate.
- Dip each truffle into the melted white chocolate, ensuring it is fully coated. Use a fork or dipping tools to remove the truffle from the chocolate and allow excess chocolate to drip off.
- Place the dipped truffles back on the parchment-lined baking sheet. If desired, sprinkle with additional powdered sugar, lemon zest, or sprinkles before the chocolate sets.
- Refrigerate the truffles for at least 15-20 minutes to allow the chocolate to set completely.
Notes
Store Creamy Lemon Truffles in an airtight container in the refrigerator for up to 1 week. For a more intense lemon flavor, add an extra teaspoon of lemon zest. You can also use a different type of chocolate for coating, such as dark or milk chocolate.
