  • 8 ounces cream cheese, softened
  • 1/2 cup powdered sugar
  • 1/4 cup fresh lemon juice
  • 2 teaspoons lemon zest
  • 1/4 teaspoon vanilla extract
  • 12 ounces white chocolate, melted
  • Optional: additional powdered sugar, lemon zest, or sprinkles for coating

Instructions

  1. In a large bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
  2. Add the powdered sugar, lemon juice, lemon zest, and vanilla extract to the cream cheese. Beat until well combined and smooth.
  3. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the mixture to firm up. This will make it easier to roll into truffles.
  4. Remove the cream cheese mixture from the refrigerator. Use a small cookie scoop or spoon to portion out the mixture. Roll each portion into a smooth ball.
  5. Place the rolled truffles on a baking sheet lined with parchment paper.
  6. Melt the white chocolate in a double boiler or in the microwave in 30-second intervals, stirring in between, until smooth. Be careful not to overheat the chocolate.
  7. Dip each truffle into the melted white chocolate, ensuring it is fully coated. Use a fork or dipping tools to remove the truffle from the chocolate and allow excess chocolate to drip off.
  8. Place the dipped truffles back on the parchment-lined baking sheet. If desired, sprinkle with additional powdered sugar, lemon zest, or sprinkles before the chocolate sets.
  9. Refrigerate the truffles for at least 15-20 minutes to allow the chocolate to set completely.

Notes

Store Creamy Lemon Truffles in an airtight container in the refrigerator for up to 1 week. For a more intense lemon flavor, add an extra teaspoon of lemon zest. You can also use a different type of chocolate for coating, such as dark or milk chocolate.
