Ingredients
- 2 cups strong brewed espresso or coffee, chilled
- 1/2 cup unsweetened cherry juice
- 24-30 ladyfingers (savoiardi)
- 6 large egg yolks
- 3/4 cup granulated sugar
- 24 oz mascarpone cheese, softened
- 2 teaspoons vanilla extract
- 1 pound fresh or frozen pitted cherries, thawed and well-drained
- 1/2 cup dark chocolate, finely shaved or chopped
- 2 tablespoons unsweetened cocoa powder, for dusting
Instructions
- In a medium bowl, whisk together the chilled espresso and cherry juice. Set aside.
- In a heatproof bowl set over a saucepan of simmering water (bain-marie), whisk the egg yolks and granulated sugar constantly until the mixture thickens, lightens in color, and reaches 160°F (71°C) on an instant-read thermometer (about 5-7 minutes). Remove from heat and let cool slightly.
- Once cooled, gently fold the softened mascarpone cheese into the egg yolk mixture until smooth and well combined. Stir in the vanilla extract.
- Briefly dip each ladyfinger into the coffee-cherry juice mixture, ensuring they are moistened but not soggy. Arrange a single layer of soaked ladyfingers at the bottom of a 9×13 inch (23×33 cm) baking dish or an equivalent serving dish.
- Spread half of the mascarpone cream evenly over the ladyfingers. Sprinkle half of the drained cherries over the cream, followed by half of the shaved dark chocolate.
- Create a second layer by repeating step 4 with the remaining ladyfingers. Top with the remaining mascarpone cream, cherries, and shaved dark chocolate.
- Cover the dish tightly with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld and the tiramisu to set.
- Just before serving, dust generously with unsweetened cocoa powder. Slice and serve chilled.
Notes
For an extra layer of flavor, you can add a quarter teaspoon of almond extract to the cherry juice mixture. Ensure your mascarpone is at room temperature for a smoother cream. This dessert is best made a day ahead to allow ample chilling time, which significantly improves its texture and flavor. Store leftovers covered in the refrigerator for up to 3 days.
