  • 1/2 cup unsweetened cherry juice
  • 24-30 ladyfingers (savoiardi)
  • 6 large egg yolks
  • 3/4 cup granulated sugar
  • 24 oz mascarpone cheese, softened
  • 2 teaspoons vanilla extract
  • 1 pound fresh or frozen pitted cherries, thawed and well-drained
  • 1/2 cup dark chocolate, finely shaved or chopped
  • 2 tablespoons unsweetened cocoa powder, for dusting

Instructions

  1. In a medium bowl, whisk together the chilled espresso and cherry juice. Set aside.
  2. In a heatproof bowl set over a saucepan of simmering water (bain-marie), whisk the egg yolks and granulated sugar constantly until the mixture thickens, lightens in color, and reaches 160°F (71°C) on an instant-read thermometer (about 5-7 minutes). Remove from heat and let cool slightly.
  3. Once cooled, gently fold the softened mascarpone cheese into the egg yolk mixture until smooth and well combined. Stir in the vanilla extract.
  4. Briefly dip each ladyfinger into the coffee-cherry juice mixture, ensuring they are moistened but not soggy. Arrange a single layer of soaked ladyfingers at the bottom of a 9×13 inch (23×33 cm) baking dish or an equivalent serving dish.
  5. Spread half of the mascarpone cream evenly over the ladyfingers. Sprinkle half of the drained cherries over the cream, followed by half of the shaved dark chocolate.
  6. Create a second layer by repeating step 4 with the remaining ladyfingers. Top with the remaining mascarpone cream, cherries, and shaved dark chocolate.
  7. Cover the dish tightly with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld and the tiramisu to set.
  8. Just before serving, dust generously with unsweetened cocoa powder. Slice and serve chilled.
