  • Total Time: 40 minutes
  • Yield: 6 servings 1x

Ingredients

Scale
  • 5 ripe medium bananas, sliced about 1/2-inch thick
  • 1/4 cup light brown sugar, packed
  • 1 tablespoon all-purpose flour
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 cup old-fashioned rolled oats
  • 1/2 cup all-purpose flour
  • 1/2 cup light brown sugar, packed
  • 1/4 cup granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) cold unsalted butter, cut into small cubes

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease an 8×8-inch or 9-inch round baking dish.
  2. In a large bowl, gently combine the sliced bananas, 1/4 cup brown sugar, 1 tablespoon all-purpose flour, lemon juice, 1 teaspoon cinnamon, 1/2 teaspoon nutmeg, and 1/4 teaspoon salt. Spread the banana mixture evenly into the prepared baking dish.
  3. In another medium bowl, whisk together the rolled oats, 1/2 cup all-purpose flour, 1/2 cup brown sugar, granulated sugar, 1/2 teaspoon cinnamon, and 1/4 teaspoon salt for the topping.
  4. Add the cold, cubed butter to the dry topping ingredients. Using your fingertips, a pastry blender, or a fork, cut the butter into the mixture until it resembles coarse crumbs with some pea-sized pieces remaining.
  5. Evenly sprinkle the crumble topping over the banana filling in the baking dish.
  6. Bake for 25-30 minutes, or until the topping is golden brown and the banana filling is bubbly around the edges. If the topping browns too quickly, you can lightly tent it with aluminum foil.
  7. Remove from the oven and let it cool for at least 10-15 minutes before serving. This allows the filling to set slightly.
  8. Serve warm, perhaps with a scoop of vanilla ice cream, a dollop of fresh whipped cream, or a drizzle of custard for an extra special treat.

Notes

For an added crunch, sprinkle 1/4 cup chopped walnuts or pecans into the oat topping mixture. If you prefer a less sweet crumble, reduce the sugar in the topping by 1/4 cup. This crumble can be made ahead; simply assemble and bake just before serving. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated in the oven.
