Ingredients
- 1 tablespoon olive oil
- 1 pound lean ground beef
- 1 medium onion, chopped
- 2 carrots, peeled and diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 6 cups beef broth (low sodium)
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon black pepper, or to taste
- 1 cup elbow macaroni
- 1/2 cup frozen peas (optional)
- Fresh parsley, chopped, for garnish
Instructions
- Heat olive oil in a large pot or Dutch oven over medium-high heat. Add ground beef and cook, breaking it up with a spoon, until browned. Drain any excess fat.
- Add chopped onion, carrots, and celery to the pot. Cook, stirring occasionally, for 5-7 minutes until vegetables begin to soften.
- Stir in minced garlic and cook for another minute until fragrant.
- Pour in beef broth and diced tomatoes (undrained). Add Italian seasoning, salt, and pepper. Bring the mixture to a boil.
- Reduce heat to low, cover, and simmer for 15 minutes to allow flavors to meld and vegetables to tenderize.
- Stir in the elbow macaroni. Continue to simmer, uncovered, for another 8-10 minutes, or until the macaroni is al dente and tender.
- If using, stir in frozen peas during the last 2 minutes of cooking.
- Taste and adjust seasonings as needed. Ladle hot soup into bowls and garnish with fresh chopped parsley before serving.
Notes
For a richer flavor, brown the beef more deeply before adding vegetables. This soup freezes well; simply omit the macaroni if freezing, and add freshly cooked macaroni when reheating. You can also add a bay leaf during simmering and remove before serving. Feel free to incorporate other vegetables like corn or spinach.
