  • 6 cups beef broth (low sodium)
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, or to taste
  • 1 cup elbow macaroni
  • 1/2 cup frozen peas (optional)
  • Fresh parsley, chopped, for garnish

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add ground beef and cook, breaking it up with a spoon, until browned. Drain any excess fat.
  2. Add chopped onion, carrots, and celery to the pot. Cook, stirring occasionally, for 5-7 minutes until vegetables begin to soften.
  3. Stir in minced garlic and cook for another minute until fragrant.
  4. Pour in beef broth and diced tomatoes (undrained). Add Italian seasoning, salt, and pepper. Bring the mixture to a boil.
  5. Reduce heat to low, cover, and simmer for 15 minutes to allow flavors to meld and vegetables to tenderize.
  6. Stir in the elbow macaroni. Continue to simmer, uncovered, for another 8-10 minutes, or until the macaroni is al dente and tender.
  7. If using, stir in frozen peas during the last 2 minutes of cooking.
  8. Taste and adjust seasonings as needed. Ladle hot soup into bowls and garnish with fresh chopped parsley before serving.

Notes

For a richer flavor, brown the beef more deeply before adding vegetables. This soup freezes well; simply omit the macaroni if freezing, and add freshly cooked macaroni when reheating. You can also add a bay leaf during simmering and remove before serving. Feel free to incorporate other vegetables like corn or spinach.
