  • 3 ripe bananas, mashed
  • 1/2 cup (1 stick) unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1/4 cup packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • Cinnamon Swirl:
  • 1/4 cup granulated sugar
  • 2 teaspoons ground cinnamon

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract and mashed bananas.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  5. In a small bowl, combine the 1/4 cup granulated sugar and cinnamon for the swirl.
  6. Pour half of the banana bread batter into the prepared loaf pan. Sprinkle the cinnamon sugar mixture evenly over the batter. Pour the remaining batter over the cinnamon sugar layer.
  7. Use a knife or skewer to swirl the cinnamon sugar into the batter. Be careful not to overmix.
  8. Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean. If the top starts to brown too quickly, tent the loaf pan with foil.
  9. Let the banana bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

For extra flavor, add chopped walnuts or pecans to the batter. Store cooled banana bread in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week. You can also freeze slices for longer storage. Serve warm or at room temperature.
