Instructions
- Preheat your waffle iron according to the manufacturer's instructions. In a large bowl, whisk together the flour, baking powder, baking soda, salt, sugar, and cinnamon.
- In a separate bowl, whisk together the buttermilk, melted butter, eggs, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
- In a shallow dish, combine the remaining 1/2 cup sugar and 2 teaspoons cinnamon for the coating.
- Spray the preheated waffle iron with cooking spray. Pour the batter onto the waffle iron and cook according to the manufacturer's instructions until golden brown and crispy.
- Carefully remove the waffles from the iron and immediately dredge them in the cinnamon-sugar mixture, coating them evenly on both sides.

Notes
