Ingredients

  • 1 box (15.25 oz) chocolate cake mix
  • 1/2 cup (1 stick) unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon peppermint extract
  • 1/2 cup crushed peppermint candies
  • 1 cup semi-sweet chocolate chips
  • 1/4 cup white chocolate chips, melted for drizzle (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, combine the chocolate cake mix, melted butter, eggs, and peppermint extract. Mix until just combined; do not overmix.
  3. Stir in the crushed peppermint candies and semi-sweet chocolate chips.
  4. Pour the batter into the prepared baking pan and spread evenly.
  5. Bake for 23-25 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
  6. Let the bars cool completely in the pan before cutting into squares. Drizzle with melted white chocolate, if desired.

Notes

For a stronger peppermint flavor, add a few drops of peppermint oil to the batter. Store in an airtight container at room temperature for up to 3 days. These bars can also be frozen for longer storage. For a festive look, sprinkle extra crushed peppermint candies on top before baking. You could also substitute dark chocolate chips for semi-sweet.
