Ingredients
- 1 box (15.25 oz) chocolate cake mix
- 1/2 cup (1 stick) unsalted butter, melted
- 2 large eggs
- 1 teaspoon peppermint extract
- 1/2 cup crushed peppermint candies
- 1 cup semi-sweet chocolate chips
- 1/4 cup white chocolate chips, melted for drizzle (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a large bowl, combine the chocolate cake mix, melted butter, eggs, and peppermint extract. Mix until just combined; do not overmix.
- Stir in the crushed peppermint candies and semi-sweet chocolate chips.
- Pour the batter into the prepared baking pan and spread evenly.
- Bake for 23-25 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
- Let the bars cool completely in the pan before cutting into squares. Drizzle with melted white chocolate, if desired.
Notes
For a stronger peppermint flavor, add a few drops of peppermint oil to the batter. Store in an airtight container at room temperature for up to 3 days. These bars can also be frozen for longer storage. For a festive look, sprinkle extra crushed peppermint candies on top before baking. You could also substitute dark chocolate chips for semi-sweet.
