Transform leftover mashed potatoes into golden, bite-sized delights with these Cheesy Mashed Potato Puffs. Crisp on the outside, fluffy on the inside, and loaded with melted cheddar and fresh chives, they make the perfect appetizer or comforting side dish that the whole family will love.

  • Total Time: 40 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 2 cups cold mashed potatoes
  • 3 large eggs, beaten
  • 1 cup sharp cheddar cheese, shredded
  • 1/4 cup parmesan cheese, grated
  • 1/4 cup fresh chives, finely chopped
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper to taste
  • Non-stick cooking spray or butter for greasing
  • Sour cream and extra chives for serving (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Generously grease a 12-cup muffin tin (or mini-muffin tin for smaller bites) with non-stick cooking spray or melted butter to ensure the puffs release easily.
  2. In a large mixing bowl, combine the cold mashed potatoes, beaten eggs, shredded cheddar cheese, grated parmesan, chopped chives, garlic powder, and onion powder.
  3. Stir the mixture thoroughly until the eggs are fully incorporated and the cheese is evenly distributed throughout the potatoes. Season with a pinch of salt and pepper if your leftover potatoes were not heavily seasoned.
  4. Using a spoon or cookie scoop, divide the potato mixture evenly into the prepared muffin cups. Fill them almost to the top, smoothing the tops slightly with the back of a spoon.
  5. Bake in the preheated oven for 20-25 minutes, or until the puffs have risen and the tops are golden brown and crispy.
  6. Remove from the oven and let the puffs cool in the pan for about 5-10 minutes. This resting time is crucial as it allows them to set so they don't fall apart when removed. Serve warm with a dollop of sour cream if desired.

Notes

Ensure your mashed potatoes are cold before mixing; warm potatoes can scramble the eggs prematurely. For a flavor twist, add cooked turkey turkey turkey bacon bits to the mixture. These reheat well in an air fryer at 350°F for 3-4 minutes.
