Transform humble green cabbage into a show-stopping dish with these incredible blistered cabbage steaks. Roasted to tender perfection with beautifully charred edges, each ‘steak’ is then generously drizzled with a homemade hot honey glaze that strikes the perfect balance of sweet, spicy, and tangy. This recipe elevates a simple vegetable to main course status or creates an unforgettable side, proving that healthy eating can be bursting with flavor. It’s a surprisingly easy, vibrant, and satisfying way to enjoy your greens with a serious kick, ready in under 40 minutes.

  • Total Time: 40 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 1 large green cabbage (about 2-2.5 lbs)
  • 3 tablespoons olive oil, divided
  • 1 teaspoon sea salt, plus more to taste
  • 1/2 teaspoon black pepper, plus more to taste
  • 1/4 cup honey
  • 1-2 teaspoons red pepper flakes (adjust to desired heat)
  • 1 tablespoon apple cider vinegar
  • Fresh parsley or chives, chopped, for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
  2. Prepare the cabbage: Remove any loose outer leaves from the cabbage. Place the cabbage on a cutting board and carefully slice it into 3/4 to 1-inch thick 'steaks' or rounds, ensuring each slice has a bit of the core to hold it together. You should get 4-6 steaks from a large cabbage.
  3. Season the cabbage: Arrange the cabbage steaks in a single layer on the prepared baking sheet. Drizzle with 2 tablespoons of olive oil, then sprinkle generously with salt and black pepper on both sides.
  4. Roast the cabbage: Bake for 15-20 minutes, then flip the steaks. Continue baking for another 10-15 minutes, or until the cabbage is tender and beautifully blistered and caramelized at the edges. Cooking time may vary slightly depending on your oven and cabbage thickness.
  5. While the cabbage roasts, prepare the hot honey: In a small saucepan, combine the honey, remaining 1 tablespoon of olive oil, red pepper flakes, and apple cider vinegar. Heat over low-medium heat, stirring occasionally, until the honey is warm and fluid, and the flavors have melded (about 2-3 minutes). Do not boil.
  6. Serve: Carefully transfer the blistered cabbage steaks to a serving platter. Drizzle generously with the warm hot honey mixture. Garnish with fresh parsley or chives, if desired, and serve immediately.

Notes

For an extra kick, you can add a pinch of garlic powder to the hot honey. If you prefer less heat, reduce the red pepper flakes. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated gently.
