Instructions

  2. Wash and thoroughly dry the apples. Carefully core each apple, making sure to leave about 1/2 inch at the bottom to create a natural 'bowl.' Scoop out some additional apple flesh from the center, aiming for about a 1/2-inch thick wall around the apple. Dice the scooped apple flesh into small, uniform pieces (you'll need about 1/4 cup total).
  3. In a small bowl, prepare the apple filling: combine the diced apple flesh, 2 tablespoons light brown sugar, 1/2 teaspoon ground cinnamon, the pinch of nutmeg, and 1 tablespoon melted butter. Stir these ingredients until they are thoroughly mixed.
  4. In a separate medium bowl, prepare the crisp topping: whisk together the rolled oats, all-purpose flour, 1/4 cup light brown sugar, 1/4 teaspoon ground cinnamon, and the pinch of salt. Add the cold, cubed butter and use a pastry blender or your fingertips to cut the butter into the dry ingredients until the mixture resembles coarse, crumbly sand.
