Ingredients
- 4 medium baking apples (such as Honeycrisp, Fuji, Gala)
- 1 tablespoon lemon juice
- 1/4 cup diced apple flesh (from coring)
- 2 tablespoons packed light brown sugar (for filling)
- 1/2 teaspoon ground cinnamon (for filling)
- Pinch of ground nutmeg
- 1 tablespoon unsalted butter, melted (for filling)
- 1/2 cup rolled oats
- 1/4 cup all-purpose flour
- 1/4 cup packed light brown sugar (for topping)
- 1/4 teaspoon ground cinnamon (for topping)
- Pinch of salt
- 3 tablespoons unsalted butter, cold and cubed
- 1/4 cup water or apple cider (for baking dish)
Instructions
- Preheat your oven to 375°F (190°C). Lightly grease a small baking dish or line it with parchment paper.
- Wash and thoroughly dry the apples. Carefully core each apple, making sure to leave about 1/2 inch at the bottom to create a natural 'bowl.' Scoop out some additional apple flesh from the center, aiming for about a 1/2-inch thick wall around the apple. Dice the scooped apple flesh into small, uniform pieces (you'll need about 1/4 cup total).
- In a small bowl, prepare the apple filling: combine the diced apple flesh, 2 tablespoons light brown sugar, 1/2 teaspoon ground cinnamon, the pinch of nutmeg, and 1 tablespoon melted butter. Stir these ingredients until they are thoroughly mixed.
- In a separate medium bowl, prepare the crisp topping: whisk together the rolled oats, all-purpose flour, 1/4 cup light brown sugar, 1/4 teaspoon ground cinnamon, and the pinch of salt. Add the cold, cubed butter and use a pastry blender or your fingertips to cut the butter into the dry ingredients until the mixture resembles coarse, crumbly sand.
- Evenly spoon the apple filling mixture into the hollowed-out apples. Then, generously top each apple with the crisp topping, gently pressing it down to form a mound.
- Carefully place the stuffed apples into your prepared baking dish. Pour 1/4 cup of water or apple cider into the bottom of the dish; this will create steam during baking, helping the apples cook tenderly and preventing them from drying out.
- Bake for 25 minutes, or until the apples are tender when gently pierced with a fork and the crisp topping is beautifully golden brown and bubbly. If the topping starts to brown too quickly, you can loosely tent the dish with aluminum foil.
- Remove the baked apples from the oven and let them cool for a few minutes before serving. These individual delights are best enjoyed warm, perhaps with a scoop of vanilla bean ice cream or a dollop of fresh whipped cream, if desired.
Notes
For the best flavor and texture, select firm, crisp baking apples that hold their shape well, such as Honeycrisp, Fuji, Gala, or a slightly tart Granny Smith. Baking times may vary slightly based on the size and variety of your apples. These individual apple crisps are absolutely divine served warm, and they pair wonderfully with a scoop of premium vanilla bean ice cream, a dollop of freshly whipped cream, or a luxurious drizzle of warm caramel sauce. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated gently in the microwave or oven for a quick treat.
