  • 12 ounces semi-sweet chocolate chips
  • 1/2 cup heavy cream
  • 1/4 cup butter, softened
  • 1 teaspoon peppermint extract
  • 1 cup Andes Mint baking chips, divided
  • Optional: Cocoa powder or powdered sugar, for dusting

Instructions

  1. Place the semi-sweet chocolate chips in a heat-safe bowl. In a saucepan, heat the heavy cream over medium heat until it just begins to simmer. Pour the hot cream over the chocolate chips.
  2. Let the mixture sit for 1 minute to allow the heat to melt the chocolate. Gently stir until the chocolate is completely melted and smooth. Add the softened butter and peppermint extract to the melted chocolate. Stir until well combined.
  3. Stir in 1/2 cup of the Andes Mint baking chips into the chocolate mixture. Mix until evenly distributed.
  4. Cover the bowl with plastic wrap, pressing it directly onto the surface of the chocolate mixture. Refrigerate for at least 2 hours, or until the mixture is firm enough to roll into balls.
  5. Once chilled, use a spoon or small cookie scoop to form the chocolate mixture into 1-inch balls. Roll each ball between your palms to smooth it out.
  6. Place the remaining 1/2 cup of Andes Mint baking chips into a shallow dish. Roll each truffle in the Andes Mint chips, pressing lightly to adhere. Alternatively, you can dust the truffles with cocoa powder or powdered sugar.
  7. Place the finished Andes Mint Chocolate Truffles on a baking sheet lined with parchment paper. Refrigerate for at least 30 minutes to allow them to firm up completely before serving.

Notes

Store the truffles in an airtight container in the refrigerator for up to 2 weeks. For a more intense mint flavor, add an extra 1/4 teaspoon of peppermint extract. You can also use white chocolate chips instead of semi-sweet chocolate for a different flavor profile. For a richer texture, use high-quality chocolate.
